Pasta Carbonara

Preparation

   Cook the pasta in a large saucepan of salted boiling water according to the package directions.

   Meanwhile, brown the smoked bacon lardons in a frying pan.

   In a bowl, beat the whole eggs with the parmesan and pepper. Add only a little salt, as the smoked bacon and parmesan are already salty.

   • 50 g·grated parmesan

   Before draining the pasta, reserve a glass of cooking water. Drain the pasta without drying it out, then return it to the hot saucepan off the heat.

   Immediately add the smoked bacon, then pour in the egg and parmesan mixture. Stir continuously so the residual heat coats the pasta without scrambling the eggs.

   If the sauce is too dry, add a little reserved cooking water. Serve immediately with extra parmesan and pepper.
