Preparation

   Place the flour on the work surface.

   For this step

   • 750 g·flour

   Reserve 70 g margarine. Put the remaining margarine in pieces into a well in the flour, then add the salt.

   • 500 g·Astra margarine
   • 2 tsp·salt

   Knead while gradually adding the water, until the dough is smooth.

   • 1 glass·water

   Roll out the dough, then spread the reserved 70 g margarine over the entire surface.

   • 500 g·Astra margarine

   Make the first single turn: fold one third of the dough toward the center, then fold the other third over it.

   Roll out the dough again, then repeat the same letter fold a second time.
